I've heard about business class passengers in El Al being served kosher "shrimp" cocktail using whitefish made in the shape of shrimp.
If El Al can serve fake shrimp, I am at a loss to why OU can't certify this plant product as kosher.
I think if the market was large enough, the simple answer would be to have an identically formulated product but label it "Impossible Kosher White Meat" or something similarly nondescript. Also the OU's decision to certify "spicy porkless plant-based snack rinds.β seems to back that theory up. The word pork is the issue here.
Even though I have a bit of a rant about chicken not being biblically fleishig... I dont disagree certifying a fake pork product that says pork.
